There’s a lot of talk about Keto in the wellness world right now. By definition, I support the concept. I believe the body (especially the brain) needs healthy fats. I personally think the problem with Keto is that many people use it as an excuse to eat crap — unhealthy fats, meats and dairy. If you eat quality fats like coconut oil and avocado, paired with grass-fed beef, organic chicken and clean dairy, then I think many people do very well on Keto. (Of course, you should consult your healthcare professional always!)
But the thing I struggle with the most on Keto (and frankly almost all “diets”) is the no sugar rule. Objectively, I know that sugar is SO BAD for my body. The damage it does is truly astonishing. But man, I love the stuff. It’s really hard for me to completely give up desserts. But I’ve been trying to really cut back and I’ve noticed that the more healthy fats I eat, the less sugar cravings I have! Nonetheless, there are times when I just want something sweet. Introducing, Keto Fluff!
I searched and searched for a delicious Keto dessert but the biggest issue was that most recipes I found were so complicated. And nothing was really that satisfying. So I created Keto Fluff! I played around with the measurements a lot until I found a consistency that I liked. I suggest you do the same. This sugar-free Keto dessert is so easy and so is modifying it. I also created this recipe because I wanted another way to incorporate Collagen (and protein) into my daily diet. I love, love, love Collagen Peptides because I can literally add it to A N Y T H I N G and there’s no taste. Plus I still get all the benefits including almost 10 grams of protein andddd amazing hair / skin / nails. Doesn’t get any better.

KETO FLUFF
Ingredients:
1 packet (1.5 oz) Sugar Free JellO pudding mix in Vanilla
1/4 c Heavy Whipping Cream
2 tbsp Whipped Cream Cheese
1 scoop Collagen Peptides
Directions:
Add Heavy Whipping Cream to a mixer or Vitamix. (It’s important to do this step first so it mixes properly)
Slowly add the JellO mix and the Collagen Peptides — blend on medium.
Stop and push down the sides. Add Whipped Cream Cheese.
Mix well until all ingredients are well incorporated.
That’s it! Enjoy!
Notes:
- I usually make 1 batch from 1 packet of JellO and it lasts me an entire week in a glass jar in the fridge.
- You can flavor it a million different ways — the possibilities are endless. Try it with Chocolate pudding mix or add in Cacao powder for extra superfood benefits.
- As I mentioned, you can play around with the proportions of liquid to powder to get different consistencies. These measurements made a fluffy but thick dessert that was definitely more sturdy than pudding / mousse. It felt more satisfying! If it’s too thick, add water — not more Heavy Whipping Cream (that makes it thicker)
- You can also use it as a topping for pancakes or even to add flavor to your coffee!
